What is your favorite nutritious dish to make with family or friends?

We like to make Egg Tacos. All of the kids participate!

CAN YOU GIVE THE Egg Tacos RECIPE?

Yes, I’d love to share it!

INGREDIENTS:

  • 8-9 eggs
  • 6 tortillas
  • 1 can fat-free refried pinto beans
  • 1 package shredded cheese
  • 1 jar store-bought salsa (optional)

DIRECTIONS:

  1. In a skillet, scramble the eggs.
  2. Warm the tortillas as directed on the package.
  3. Assemble the tacos by first putting a layer of beans on a tortilla, then the scrambled eggs, then cheese and then salsa (if desired). Repeat with the remaining tortillas and ingredients.
  4. Warm up the tacos in the microwave, if needed, and enjoy!

WHAT IS YOUR FAVORITE CHILDHOOD MEMORY INVOLVING COOKING AND EATING TOGETHER WITH YOUR FAMILY MEMBERS?

My favorite memories include parties for Christmas Eve and birthdays. Plus, chatting over hot chocolate when it's cold outside or iced tea when it's hot is fun, and making ice cream for 4th of July or when peaches are in season...Yum-o!

WHAT TIPS OR ADVICE DO YOU HAVE FOR SOMEONE WHO IS NEW TO THE KITCHEN OR JUST GETTING THEIR KIDS INVOLVED IN THE KITCHEN?

Expect a mess, but that's part of the fun. Teach kids to clean up after themselves. Also, teach them not to be afraid of the heat (on the stove or in the oven) by showing them how to handle it safely and properly – with adult supervision, of course.
