Grilled chicken with pasta primavera, also known as Chick Chick Veggie Pasta. 

HOW DO THEY HELP?

Meg helps with the chopping and the grating of veggies and coming up with "off the top of our heads and off the hook" recipes with Mom. She helps with the sautéing and the clean up too. She's a great kid!

WHAT IS YOUR FAVORITE DISH YOU REMEMBER EATING AS A CHILD?

Taco Taco.

INGREDIENTS:

  • 1 pound ground beef
  • 1 package corn tortillas
  • Guacamole (store-bought or avocado smashed with cilantro and garlic, salt and pepper)
  • 1 tomato, chopped by a grown-up helper (GH)
  • Shredded lettuce
  • Shredded cheddar cheese, to taste
  • Sour cream, to taste
  • Hot sauce, to taste

DIRECTIONS:

  1. Sauté the ground beef in a large frying pan.
  2. In another medium-sized pan, fry the tortillas in corn oil until crisp.
  3. Add any condiments (e.g. tomato, lettuce, cheddar cheese, sour cream, guacamole and hot sauce) you like to your taco and you are done!

WHAT IS YOUR FAVORITE CHILDHOOD MEMORY INVOLVING COOKING AND EATING TOGETHER WITH YOUR FAMILY MEMBERS?

Making the tacos in the kitchen with my mom. She also used to make her own tortilla chips, so we would help with that and all the fixings.

WHAT TIPS OR ADVICE DO YOU HAVE FOR SOMEONE WHO IS NEW TO THE KITCHEN OR JUST GETTING THEIR KIDS INVOLVED IN THE KITCHEN?

Start with fresh ingredients like the recipe I wrote. Make it so simple that dinner is ready in less than 15 minutes. Keep it fresh, healthy and simple.
