- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons extra virgin olive oil (EVOO)
- Salt and freshly ground black pepper
- 5-6 carrots, peeled and cut into chunks
- Pre-heat the oven to 375ºF.
- In a small bowl, stir together the soy sauce, honey, EVOO and some salt and pepper.
- Put the carrots into a casserole dish and toss them with the honey-soy mixture. Roast, turning occasionally, until tender, about 30 minutes. Serve warm.
