Mandarin Salad


  • 2 tablespoons orange marmalade
  • 2 teaspoons soy sauce
  • 1 tablespoon rice wine vinegar or white wine vinegar
  • 3 tablespoons canola oil
  • 2 hearts of romaine lettuce, chopped
  • 1 small can mandarin oranges, drained


  1. In a salad bowl, whisk together the orange marmalade, soy sauce and vinegar, then whisk in the oil.
  2. Toss lettuce and oranges to coat with dressing and season with salt and pepper.
