Airplane Snacks: Mediterranean Pitas

Serves 1-2

Pack your own fresh and fabulous pitas for travel by plane, train or automobile. Try Rach’s Veggies and Dip on the Go as well!


  • 1 cup shredded carrots
  • 1 cup cucumber, cut into matchsticks
  • 1/4 cup kalamata olives, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 lemon
  • 2 tablespoons extra virgin olive oil (EVOO)
  • Salt and pepper
  • Mini pitas, cut in half


In a medium size bowl, mix everything together, then stuff about 1/4 cup of the mixture into each pita half. Wrap it up and take it with you!
