You can whip up one of these quesadillas for a pick-me-up that’ll keep you going strong anytime of day – breakfast, lunch or snack! It packs up better than you might think, so try adding a few wedges to your lunch box.
- 2 whole wheat flour tortillas
- 2 tablespoons natural-style peanut butter, creamy or chunky
- 1 banana, cut in 1/4-inch-thick slices
- Spread both tortillas with peanut butter. Arrange the banana slices on one of the tortillas and top with the second tortilla. Heat in a nonstick skillet until lightly browned on both sides and gooey. Cut in wedges and serve.
