Caramelized Onion and Apple Crostini

This sweet and savory snack is easy to make for a crowd and is perfect for nibbling ahead of Thanksgiving turkey-time and at holiday gatherings throughout the season.

Young chefs can help cook the apples and onions as well as put the crostini together.

Ingredients

  • 1 cup balsamic vinegar
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 1 small onion, chopped
  • 2 Gala apples, or any variety of apple of your choice, roughly chopped
  • 1 tablespoon pine nuts
  • Salt and freshly ground black pepper
  • 1/2 regular or whole grain baguette, cut on a bias into slices and toasted

Directions

Place a small saucepan over medium-high heat and add the balsamic vinegar. Bring up to a light simmer and cook for about 6-8 minutes, or until it reduces by about half and thickens up.

While the balsamic vinegar is cooking, place a medium size skillet over medium-high heat and add the EVOO. Add the onion and apples to the pan and cook for about 8-10 minutes, until the mixture starts to brown. Add the pine nuts and season with a pinch of salt and pepper.

Top the toasted baguette slices with a spoonful of the onion and apple mixture. Drizzle with the reduced balsamic vinegar and serve.
