Cauliflower Snow Peaks

Serves 4

This dish will make cauliflower lovers out of anyone who likes Parmigiano Reggiano or Pecorino Romano cheese.


  • 1 head cauliflower
  • 1 tablespoon butter
  • 1/4-1/2 cup grated Parmigiano Reggiano or Romano cheese


  1. Steam cauliflower in a big pot with 1 inch of water for about seven minutes.
  2. Drain cauliflower and toss with butter and cheese.
  3. You can eat as is or mash it up into mountains on your plate!
