Cherry Tomato and Scallion Salad

Serves 6-8

This simple salad goes well with a variety of meals.


  • 2 pints cherry tomatoes
  • 4 scallions, thinly sliced
  • 1/4 cup extra virgin olive oil (EVOO)
  • Salt and pepper


Place the cherry tomatoes, scallions, EVOO, salt and pepper in a bowl and toss until coated. Serve.
