Honey-Soy Oven-Glazed Carrots

Serves 4

  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil (EVOO)
  • Salt and freshly ground black pepper
  • 5-6 carrots, peeled and cut into chunks


  1. Pre-heat the oven to 375ºF.
  2. In a small bowl, stir together the soy sauce, honey, EVOO and some salt and pepper.
  3. Put the carrots into a casserole dish and toss them with the honey-soy mixture. Roast, turning occasionally, until tender, about 30 minutes. Serve warm.
