Coconut Rice Pudding

Serves 4

This is one of my favorite desserts. Some days, when I’m in the mood, it’s breakfast. I often serve this to friends for dessert to drive home the point that gluten- and dairy-free eating can be delicious. You can use any rice, but my favorite is arborio, the kind used in making risotto. It makes a much creamier pudding. The coconut milk adds such a wonderful flavor that I don’t use sugar. I’ve added a small optional amount to the recipe.

Gingerbread Men Cookies

Decorating gingerbread men is the perfect after school/after homework holiday activity! Ask a grown-up helper (GH) for help making the dough the night before so it can refrigerate all night and during the day. When you return from school, it will be ready for baking and decorating. Below, Dwayne "The Rock" Johnson has shared this delicious gingerbread recipe that he likes to make with his daughter. He says, "When I make gingerbread men with my daughter, we like to pour all the decorations into separate bowls and spread them out on the kitchen table. The frosting is our “glue” to affix all decorations. You can get creative when you make them and play holiday music and invite friends and family to participate." And, while cookies are a "sometimes" treat, gingerbread is surprisingly low in fat. Plus, the cookies are filling, so just one with a glass of milk will do!

Fruit and Yogurt Smoothies

Smoothies are a great snack for everyone and refreshing on a hot day. You can have your kids pick out the fruit they want and you can substitute soy milk and yogurt for cow’s milk products if you choose. This smoothie recipe comes to us from Felicia B. Here’s what she has to say about how her kids help to make their own smoothies: "To help make the smoothies, the children round up all of the ingredients and get the blender out. They put the ingredients in the blender and push the buttons to turn it on and off. I supervise, but they do the rest."

Special treats like this Cassava Cake are to be eaten once in a while and only after you’ve been a good eater the rest of the time. That’s why it’s called a treat! Note: Cassava (also called yuca) is a woody shrub native to South America and has an edible starchy root. The sweet cassavas can be eaten while the bitter kind must be cooked before eaten to remove toxins. Look for edible cassava where Latin American products are sold.
