Polenta Egg Bake and Roasted Sausages with Vinegar and Grapes

The eggs in this recipe are a new version of Birds in a Nest – the polenta being the nest here. The sausage dish dates back to Columbus. It’s an oldie but a goodie and better than ever when served with these eggs. Tip from Rachael: Muffin tins hold six portions, so two people get two eggs or everyone gets 1 1/2 – your call. I could eat four all by myself, easy!    

French Toast Cups with Fresh Fruit

Better Pancakes

Serves 4 (makes about 12 pancakes)

Rachael says, “My friend Mollie makes these pancakes for her two girls, 3-year-old twins Isabel and Maya. The girls are great eaters, but even the best eaters demand pancakes in between breakfasts of scrambles, yogurt, fruit or oatmeal. Mollie’s solution for giving her girls the food they need to start their day while giving them what they want (which is pancakes) is to ignore the directions on the back of the box. Where it says add one egg, she adds more and where it says add water, she adds milk, bumping up the protein for her girls’ start of their day. In addition, she stirs in plenty of fresh fruits for fiber. Good idea, Mol – thanks for sharing!”

If, since last Mothers’ Day, you have: Yelled at Mom Skipped your chores Faked being sick to skip school Acted mean to the dog, cat, turtle or hamster or “forgot” to feed them Lied about where you were going with your friends and/or what you were doing with them Completely faked-out your mom out about who started that last fight with your baby brother or sister Lied about finishing your homework or when it was due If any of the above are true, I was a kid too, once, and I am telling you – YOU OWE HER BIG TIME! Make her this breakfast for Mother’s Day. She deserves it and you’ll really like it, too! P.S. Let Mommy sleep in on Mother’s Day!
